The BEST French Dip Sandwiches and Au Jus

YOU GUYS. I am so stinking excited to share this recipe with you!!! Especially because I just made some for the blog and have remembered just how good they are!

I can remember just like yesterday, about 5-7ish years ago, my mom and dad would make these for us in my childhood home. We spent many hours doing homework, sharing tears, laughter, and dinners at our kitchen table. I vividly remember sitting in ‘my seat’ watching my parents cook us French Dip sandwiches. There was 6 of us, so it was A LOT of work for these sandwiches! I realize this now, lol.

I remember his excitement the first time he made them, assuring us we would love them. And sure enough, here I am sharing my favorite recipe, filled with fond memories. I hope you can build memories just like I have around these savory sandwiches!

My dad MADE ME this gorgeous cutting board for Christmas two years ago! It is so fun getting to use it after having it packed away for the last year!

They aren’t the most cost-effective dinner, I’ll be honest. Although, they do make a great meal for birthdays, anniversaries, holidays, etc… simply because they are THAT good! I found a basic french dip recipe about 2 years ago that I have since changed and tweaked to really make it my own!

Ingredients

  • 6 Hoagie rolls
  • 1.25 lbs Roast beef or 2 slices per roll is a good estimate (1.5 lbs is just a little much unless you’re making with 8 rolls)
  • 2 large Onions
  • 2 Tbsp Minced garlic
  • 1 tsp Salt
  • 2 tsp Black pepper
  • 1.5 Tbsp Flour
  • 32oz. Beef broth
  • 1/4 cup Worcestershire sauce
  • 3 Tbsp Butter
  • 12 slices Swiss cheese

Directions

Be sure to buy your hoagie rolls the day before or day of. You want them as fresh as possible!

I have found the very best flavor using a cast iron pan. I use it by far the most out of all my pans. If you don’t have one yet, try it! It is SO worth it, I promise! This is the one I have!

The cast iron pan gives the best flavor to the onion!

I think the BEST part of this dish is the Worcestershire sauce, so don’t forget this part. I can tell a huge difference right away if I forget it!

  1. Preheat cast iron on low for 5 minutes, then turn to medium heat. The preheat helps the heat distribute evenly.
  2. Thinly slice onion, and add it with 2 Tbsp butter, salt and pepper to the pan on medium/high heat until browned. I usually cook for 10 minutes.
  3. Add the garlic for 1-2 minutes right before the onion is done. Remove from pan and set aside.
  4. Add 1 Tbsp butter, flour and some of the beef broth. Scrape the bottom of the pan to create a paste. Wisk to help with clumping. Combine remaining beef broth, Worcestershire sauce and bring to a boil.
  5. Reduce heat and simmer for 15 minutes. Preheat your oven to broil.
  6. Slice rolls and broil until bread is lightly browned.
  7. Dip 2-3 slices of meat into the beef broth just long enough to warm the meat, then lay on each bottom half. Do this for each bottom half. Be careful not to cook your meat.
  8. Add onion and swiss cheese to the tops.
  9. Broil for 3 minutes or until cheese is fully melted.
  10. Slice sandwiches in halves and divide the beef broth into dishes for dipping. This is your Au Jus!
